Progress: Using a drill and WD40 we managed to drill through the pins preventing the rest of the deconstruction of the crusher. Then using blocks of wood as wedges as well as mallets/a hammer, we slowly but surely were able to separate the gears from the shafts that they were initially pinned to. Then very briefly we took steel wire attached to a drill to the crushing rolls just to see what they might look like after treating the rust with vinegar and scrubbing the metal. See in the picture below.

 

Next Steps: Remove rust and paint from metal parts and treat to prevent future rust. Sand down wood and re-treat to waterproof it. Try to repair halved wooden panels using epoxy if possible. Possibly replace screws and bolts with more durable/rust-proof bolts. Finally, put the crusher back together.
